First thing's first is that it could have had more of a kick. To me that means more paprika, cumin and cayenne pepper. The reason I know this to be true is my wife, who normally asks me to back it down a smidge, actually said she preferred my seasonings to have more a spicy as opposed to sweet taste. Whoa! That's like giving me a free pass to channel my inner Emeril! BAM!
As currently listed below, this rub had a more sweet taste with a hint of thyme and I could not pick up any of the cayenne or other ingredients. Like I mentioned above, less brown sugar and thyme and more paprika, cumin and cayenne should help bring up the heat as well as a little more garlic and onion. This is a work in progress that I will update accordingly.
I then grilled these suckers on my new Weber Genesis S-330 that my amazing wife got me for my birthday! She knows exactly the way to my heart. Just take a look at the picture of that beauty, 637 square inches of grilling surface just waiting for our next get-together with friends. Now I just need me someone to sell me some propane and propane accessories.
After being grilled to perfection, I threw together a quick sandwich with pepperjack cheese and enjoyed before I had to run off to some errands. The rub worked well in sandwich form with the pepperjack and was quite tasty but when eaten alone lacked the depth and kick discussed above. It tasted good but the flavor wasn't that well-developed. C'mon Emeril, don't fail me next time, BAM!

3 tbs brown sugar
1 tbs thyme
1/2 tbs paprika
1/2 tbs onion powder
1 tsp garlic powder
1/4 tsp cumin
1/4 tsp cayenne pepper
