Garlic Roasted Potatoes


Ingredients

1 1/2 lbs red potatoes (quartered)
3 T rosemary
2 T garlic cloves
1/2 red onion (diced)
3 T olive oil

Directions
  1. Pre-heat oven to 400°F.
  2. Combine potatoes, rosemary, garlic, and onions in a large bowl. Add olive oil and mix thoroughly.
  3. Place in a baking dish for ~30 minutes. Let cool for a few minutes before serving.
