Bruschetta On the Fly!


Ingredients

1 cup diced Roma tomatoes
2 tbs fresh basil, chopped finely
2 tsp olive oil
4 cloves garlic, finely chopped
salt and pepper to taste (though I skip the salt)
1 loaf French bread


Directions
  1. In a bowl, combine tomatoes, basil, olive oil, and garlic.
  2. Season to taste.
  3. Two options for the bread: slice the French bread and spoon the mixture directly on the bread. Or you can toast the the bread prior to assembly.
